Simple breakfast frittata
serves 2
4 eggs
3~4 T low-fat milk
one small handful of greens (I like spinach or parsley)
1/4 C finely grated pecorino romano cheese
canola oil
salt and pepper to taste
- Preheat broiler. Using a fork, gently mix together the milk, eggs, salt, and pepper together.
- In a small skillet, heat the oil to medium heat until shimmering. Add the eggs, and with a silicone spatula, pull in the sides once in a while. Add spinach and continue.
- Once the eggs are set on the bottom but will runny on top, sprinkle the cheese and place the skillet under the broiler for 3~5 minutes, or until cheese is melted and browned and bubbly.
- Pull out of the oven and let rest for a couple of minutes. Release from the skillet and cut into wedges to serve.
